Gluten Free and GOOD! Oat Muffins

You know it's good when your husband steals two of these fresh out of the oven and he HATES anything "gluten free".  I didn't tell him they were also oil and butter-free and dairy-free.

Gluten Free Oat Muffins

In a small bowl mix:
3 cups oat flour (I used Bob's Red Mill) or make your own with oatmeal and a blender
1 teaspoon baking soda
1 teaspoon baking powder

In a larger bowl mix:
1/2 cup honey
1 cup almond milk
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon salt

Blend wet and dry adding a Tablespoon or two of water if batter is too thick.  Let sit a few minutes then place in a 12 tin muffin tin sprayed with non stick spray or use muffin tin liners.

Bake in preheated 350F oven for 14-16 minutes.  Do NOT overbake or they will be crumbly.

Thanks for visiting. Having been fortunate enough not to have to diet as a young woman - hitting middle age to find my Metabolism moved to Aruba and didn't even send a postcard was a rude awakening. Thanks for sharing the fun and the pain of getting back in shape. Note: If you are a stranger and include a link in your comment - it will not be posted, to ensure no SPAM or viruses are shared.
